Champagne is elaborated exclusively from 3 grape types :


- 2 black grapes : pinot noir and pinot meunier
- 1 white grape : chardonnay

Harvest usually takes place end of September or early October.


Grapes are pressed the closest possible from where they’ve been harvested in order to insure optimal quality and avoid that the juice would be coloured during transport. Our supplies are spread over the whole AOC champagne area (about 30 different ‘crus’ in the vineyards of the Montagne de Reims, Côte des Blancs … ) so we mainly receive the grapes as must (freshly pressed grape juice).
